A very simple and tasty dish is pork roast. The recipe in a frying pan allows you to cook it as quickly as possible and please your home with a hearty hot lunch. With such a "second" you can combine absolutely any side dishes. Plus, gravy doesn't need additional sauces.

Regardless of the recipe chosen, the dish in question includes chunks of pork fried until golden brown, a variety of vegetables and a thick sauce.

It is best to choose a tenderloin, neck, or back to keep the pork from drying out.

If meat is only eaten frozen, then it should be thawed at room temperature - not in water or in a microwave oven. Otherwise, even the gravy will not save the dish from dryness.

Many housewives also call the classic recipe for pork frying "like in a dining room." Indeed, such a dish was very popular in schools, hospitals and other institutions during the Soviet era. To this day, diners are happy to order it for mashed potatoes or pasta. But you can easily prepare such a treat yourself, using the simplest and most affordable products: a large piece of boneless meat (about 1 kg.), 450 ml. sour cream (you need to take not the fattest product, but 15-20%), 2 onions, 2 carrots, a couple of tablespoons of tomato paste or ketchup without additives, any seasonings to taste, salt.

  1. First, you need to fry pork well in a pan on all sides, cut into small pieces. Some housewives prefer to do this without oil. In this case, the dish turns out to be less greasy. If a lot of juice is released from the meat, then it should be drained into a separate bowl.
  2. White onions cut into large half rings and carrots grated on a coarse grater are added to the meat. The mixture is salted, seasoned with the selected spices and fried until vegetables are soft over medium heat.
  3. The meat juice is returned to the pan, and with it tomato paste is added to the dishes. All ingredients are simmered over low heat for 20-15 minutes.
  4. It remains to pour the sour cream into the pan, add 250-300 ml. water and fry with gravy for at least 45 minutes. If necessary, it can also be supplemented with salt.

It is very tasty to serve the finished dish, sprinkle it with finely chopped fresh herbs. As a side dish, mashed potatoes and boiled or fried broccoli are ideal.

If the pork roast with gravy will be served with pasta, then it is best to cook it with a tomato. This recipe is even more budgetary. You will need to use the following ingredients: 500 g of pork tenderloin, 400 ml. meat broth (preferably from the same product), 2 pcs. carrots, onions and tomatoes, 3-4 cloves of garlic, 4 tbsp. l. tomato paste.

Cooking steps step by step:

  1. Thoroughly washed and dried meat is cut into small cubes and fried in fat or oil until golden brown.
  2. Vegetables chopped in any convenient way are sent to the pork pan. Tomatoes (like carrots) can be grated on a coarse grater, setting the remaining skin aside.
  3. When the vegetables are well fried, tomato paste and broth are added to them. If necessary, the mixture is salted, seasoned with the cook's favorite spices and left to simmer over minimal heat.
  4. After about 40 minutes, chopped garlic is added to the dish, the stove turns off, and it simmer for another 7-10 minutes.

Such a roast of pork with gravy is served not only with pasta, but also with boiled rice or buckwheat. The result is a hearty, warming dish that is the perfect lunch for chilly autumn or winter days.

Tomato Roast Recipe

If juice is used instead of tomato paste in the preparation of the dish under discussion, then you will need to thicken the gravy with wheat flour. Otherwise, it will be too liquid. In addition to the standard amount of pork, you need to take: 350 ml. natural tomato juice (you can home-made homemade), a couple of tablespoons of flour, 200 gr. fat sour cream, onion and a couple of bay leaves.

  1. The meat is cut into small pieces and fried over high heat. It is very important that an exceptionally clean fillet without lard is used. During the cooking process, you need to pepper it. It is best to use a mixture of several types of pepper for this.
  2. Onion and salt, cut into large pieces, are added to the meat, covered with an appetizing golden crust. It is imperative to use it in such a dish. The vegetable softens the meat and makes the taste of the finished treat richer. Together, the ingredients are simmered over medium heat for about 15 minutes. If there is no liquid left in the pan, you can add some water to it.
  3. Tomato juice is mixed with flour and added to the main components. Sour cream, bay leaves are placed in the pan, and stewing continues for another 7-10 minutes. The mixture must be stirred periodically so that it does not burn.
  4. The fried sauce will soon thicken right in front of the culinary specialist and acquire an appetizing rich color.

If desired, a few minutes before readiness, you can add various aromatic herbs to the dish. But even without them, it turns out to be very tasty. You can simply dip bread into the prepared sauce and discard any side dish.

Spicy pork roast with sour cream and bell pepper gravy

Fans of spicy second courses can slightly change the recipe to their liking. Mustard and horseradish root will add piquancy to it. This option will surely appeal to men. But for the smallest family members, it will seem too sharp. To prepare the dish you will need: 400 g of meat, 5 tbsp. tablespoons of tomato paste, 200 g of fat sour cream, 2 sweet bell peppers, a couple of cloves of garlic (you can replace the fresh product with a dry granulated one), 1 tbsp. l. mustard, horseradish root to taste.

  1. The meat is quickly fried over high heat until golden brown (best cut into thin strips).
  2. Large half rings of bell pepper, carefully peeled from seeds, are sent to the pan with pork. Already at this stage, it is worth adding garlic or granulated product cut into small pieces to the container, as well as salt.
  3. When the pepper slices become soft, you can pour the meat and vegetables with the future sauce. For this, tomato paste, sour cream and mustard are mixed. All ingredients together are stewed for at least 15 minutes.
  4. About 5 minutes before the dish is ready, horseradish root is added to it. Its amount depends on the tastes of the culinary specialist himself and all his household.

The resulting roast with thick gravy goes well with pancakes and savory pancakes. It can replace the traditional Belarusian “machanka” for them.

Vegetable stir-fry with pork and fresh tomato gravy

In the fall, it is especially important to prepare gravies, which include a large number of different vegetables. Likewise, frying with pork will perfectly complement the sauce of tomatoes, eggplant and red bell pepper. It turns out to be simply extraordinary tasty and tender. In addition to low-fat pork tenderloin (about 600 g), for such a dish you will need to use: 400 g each of tomatoes, eggplant and red bell pepper (all fresh), granulated garlic, black pepper, onion, salt, and other favorite spices.

  1. The meat is cut across the fibers into small pieces and, together with the onion, cut into half rings, is fried until the vegetable is transparent.
  2. Skinless tomatoes are grated on a coarse grater, bell peppers are peeled from seeds and cut into cubes, eggplants - in miniature slices. The latter are quickly fried for 3-5 minutes. The eggplants should be soft without losing their shape.
  3. Vegetables are sent to meat, the whole mixture is salted, poured with water (approximately 400 ml.) And simmered over low heat for 25 minutes. Shortly before cooking, garlic and pepper are added to it. If desired, you can also add salt to the dish and add any other selected spices to it.

The prepared treat is poured over mashed potatoes or any other side dish. Vegetables make it especially thick and original in taste.

Cooking recipe with adjika

Adjika adds pungency and piquancy to the discussed dish. You can use both a home and a ready-made commercial product. The amount of this additive can be adjusted to your liking. Usually 1 tsp is enough. adjika for 500 g of meat. In addition to the listed ingredients, you need to prepare the following: a couple of tablespoons of tomato paste or ketchup, an onion, 0.5 cups of meat broth. The latter can be replaced with plain water. Of course, you can't do without salt and spices.

  1. Chopped meat and onions are fried together until the vegetable is soft. The ingredients are salted and seasoned with the selected spices.
  2. Adjika, meat broth and ketchup are sent to the frying. When the mass boils, the fire under it is reduced to a minimum. The dish is stewed for at least 25 minutes. During this time, the meat should become soft and tender.

If you use plain water instead of broth for gravy, then it is best to first boil it, and then dissolve the bouillon cube in it.
