    Production of cold sweetness

It is spent on its manufacture about 24 hours, in the process of which the future ice cream first - which is surprising - heats up, and then cooled.

The process begins with the receipt of raw materials. Main raw materials - sugar, butter, dry whole and skimmed milk. Aromatic additives for ice cream - vanillin or vanilla, cream-crelation syrup, cocoa powder, natural coffee, etc. Mixtures for ice cream are prepared according to recipes. The next step is homogenization, that is, mixing and pressure on the mass, which turn it into a homogeneous product. After that, it follows pasteurization - the process destroying all bacteria that could get into the mixture. It passes under the temperature + 86 C.

After that, the creamy mass is cooled to a temperature - 6 s, and further starts to ripen in another room at a temperature of + 4 s in special containers. The ripening process is the longest - it takes about 20 hours.

Next, apriming is followed - at this stage, the ripening ice cream is saturated with air. The ice cream is poured into the freezer installation, in which it is frozen to the temperature -6 C and is saturated with oxygen. And only after that it "rides" into the packing shop.

If you need to make a soft ice cream - it is also subjected to hardening. After the delivery, it enters the razorosil chamber with a temperature - 40 s and quickly freezed. Only after such an ambulance frost, the ice cream discloses its delicate structure and creamy taste. Soft ice cream is made mainly in restaurants and cafes, but it resembles a cream. It is also sold for a swim and has a little shelf life.

Each stage of the production of ice cream passes under clear control of temperature and time. All these operations make it possible to obtain a homogeneous mass structure, and in the future, delicious and gentle delicacy.
